Pasta Cheese Sauce

This is a nice and tasty cheese sauce for pasta that can be used for a variety of pasta types including spaghetti, shells and twists. Its simple, healthy and quick to make that kids and adults will love. This great cheese sauce for pasta also makes a great pasta bake for the oven.

Ingredients (serves 4)

  • 250ml single cream
  • 200g Gran Podano Cheese
  • 2 mozzarella balls
  • 100g rocket
  • 6-8 rashers of bacon, chopped into small strips. (Use smoky bacon if you want the sauce to taste a little smokey)
  • A splash (approx. 25ml) of white wine (Optional)
  • 10 chopped Basil leaves

  1. Fry the chopped bacon over a medium heat in a saucepan until it is cooked which should take around 5 minutes stirring often.
  2. Pull the mozzarella balls into shreds and grate the Gran Podano cheese.
  3. When the bacon has cooked, add the cream, mozzarella, most of the Gran Podano and white wine.
  4. Stir until the cheese has melted and the sauce is of a smooth and slightly gloopy consistency. This can be kept over a low heat until the pasta is ready.
  5. Drain the pasta and allow to air in the colander for a minute to ensure you don’t carry a lot of water into the sauce.
  6. Combine the pasta, sauce, most of the rocket and most of the chopped basil. Mix until nearly all of the pasta has been covered in the sauce.
  7. Serve and add a garnish of a little rocket and chopped basil. Sprinkle the remaining Gran Podano cheese onto the pasta.
  8. Add a little fresh ground pepper to taste.

Ingredients you can add to cheese sauce for pasta

  • You could always try adding to the dish some lightly fried cherry tomatoes to give it some different colour. Fry these separately until softened and place on the pasta after it has been plated (before the garnish).
  • Finely chopping an onion and adding to the part cooked bacon adds a little more flavour. You could also add some chopped chilli peppers for spice.
  • Adding 100g of small button mushrooms to the frying pan when the bacon is half cooked would work well.
  • You could serve the dish with a salad and garlic bread, in which case the above would be enough sauce for around 5 people.

Alternative Ingredients

It won’t taste quite as nice, but if you’ve got them in the cupboard then try them.

  • Gran Padano can be replaced with another hard cheese such as parmesan.
  • Rocket can be replaced with baby spinach.
  • Bacon can be replaced by 100g of lardons or a vegetarian meat substitute.
