Macaroni Cheese

This simple to make macaroni cheese recipe is an old favourite loved by young and old alike. It is quick to make and can be baked in the oven or cooked on a hob.

This recipe serves 4 generously.

Ingredients to Make Macaroni Cheese

  • Macaroni 400g
  • 25g/1 oz Butter
  • 25g/1 oz Plain flour
  • 600ml/1 pint Milk
  • Salt and pepper (white or black – your choice) to taste
  • 200g/7oz Cheese such as Cheddar, Red Leicester or Gouda
  • (Optional) 40g Parmesan for the top or a sprinkling of paprika, or a sprig or two of fresh herbs such as parsley, coriander or basil.


  1. Boil the macaroni pasta in a large saucepan of boiling hot water for about 8-10
    minutes (go by the instructions you’ll get on the packet). When boiled, drain and set aside allowing it to steam off in the colander or pan (this helps get rid of the excess water which might water down your sauce).
  2. Place the butter in a saucepan and melt over a medium heat.
  3. Add the flour whilst stirring and cook for a minute or two (This is known as a roux).
  4. Remove the pan from the heat and gradually add the milk bit by bit, stirring each splash to form a smooth mix before adding more. Do not add all the milk at the same time.Macaroni cheese sauce recipe thats simple to make
  5. Once the milk is mixed in with the flour, return the pan to the heat. Stir continuously as the sauce heats and bring it to the boil.
  6. Allow the sauce to simmer for 5-10 minutes and add a little salt or pepper to taste.
  7. Stir in the cheese, letting it melt gradually without boiling the sauce. When it is mixed and melted remove it from the heat.
  8. Mix the macaroni and the cheese sauce in the sauce pan (don’t use the colander for this) and then place it in an oven proof dish. Sprinkle on the grated Parmesan (or add the dusting of paprika) and place under a hot grill for around 5 minutes or until the cheese on top starts to go crisp or form a slight crust.

Variations of Macaroni Cheese

  • You could add one two sneaky vegetables to the macaroni cheese meal such as button mushrooms (larger mushrooms may turn it darker) or onions (red or white). Just simply fry first in a small amount of butter or oil to before mixing them into the macaroni cheese sauce recipe.
  • Alternatively, small pieces of cauliflower or broccoli can be boiled for a few minutes until they start to turn soft and then mix them with the rest of the macaroni cheese. Sprinkle the top with a little extra cheese before grilling to give the top a lovely crusty finish to the meal.
  • Roasted red peppers give a nice, slightly more adult flavour. Grill one or two peppers until their skins turn black, then remove the skins, slice the peppers into strips and mix into the macaroni cheese sauce.
  • You could fry some baby tomatoes until they start turning soft, then add a few chopped leaves of basil, mix around and then place a few of these on top of the dish after grilling.
  • Who says it has to be macaroni? There are plenty of types of pasta. You could always vary the kind of pasta you use.
